Sugar on Snow (Maple Taffy)
Why it’s Vermont: Sugaring-season staple across northern New England—hot maple syrup poured onto clean snow and rolled onto a stick.
How to make it (field-tested):
- Boil pure maple syrup until it reaches the soft-ball/taffy stage (use a candy thermometer).
- Pour thin ribbons onto packed, clean snow (or crushed ice).
- Roll with a popsicle stick; serve immediately (classic with cider + donuts).
